The Gulf Kingfish
The Gulf Kingfish belongs to the Scianidae family. The adult size can reach 60 cm for 1,36 kg. It has a lifespan of 6 years. It breeds from September to March. It can be fished all year. The Silk Snapper belongs to the Lutjanidae family. It can reach a maximum of 83 cm in length and 8.3 kg in weight. They can live up to 30 years. The spawning season can last all year round. The fishing season for silk snapper is from late spring to summer. Silk snappers have an elongated compressed bodies. They are generally red to pinkish red and lighter on the belly. Some fish have thin undulating yellow lines on their sides. A key to identification is the iris of their eyes, which is bright yellow. Their fins are reddish, with yellow reflections on the anal and dorsal fins. Their caudal fin has a dark border and their pectoral fins reach the anus and are pale yellow. Juveniles have black or dark red spots on their upper sides, just below the front edge of their dorsal fin. They have a large mouth equipped with one or more rows of pointed conical teeth on both jaws. Their canines are much larger on the upper jaw. They have an anchor-shaped tooth patch, with a rear extension, on the roof of their mouth and a pair of dental patches on the sides of the roof of their mouth. They have sawtooth caps. Their anal fins have pointed tips, 3 spines and 7 or 8 rays; their caudal fin is lunar; their dorsal fin is continuous with 10 or 11 spines and 13 or 14 rays. They have 16 or 17 lower branches. Their bodies are covered with rough scales and the rows of ladders on their backs are oblique above the lateral line.

The Red Grouper belongs to the Serranidae family. The Red grouper reaches a maximum total length of 125 cm and a maximum declared weight of 23.0 kg. Red Groupers are thought to have a lifespan of about 25-30 years. They breed from January to April. It is abundant at the end of summer. The red grouper is a robust, medium-sized fish. It has large eyes and differs in size, the anterior pair being slightly smaller than the posterior pair. Pelvic fins are shorter than pectoral fins. The pelvic fins are inserted behind the pectoral fins on the body. The red grouper has scales and thick skin at the base of the dorsal and anal fins. The caudal fin is truncated and the caudal peduncle has no saddle. The head and body of the red grouper are dark reddish brown in color, then fading to pink or reddish on the sides and ventral side. Light-colored spots may be observed scattered over the body and small black spots may be present around the eyes. The anal, dorsal and caudal fins have dark margins. When the fish is resting, the coloring becomes more split, resembling the Nassau grouper.

Many fossil remains, several million years old and dating from the dinosaur era, show that the tarpon has the particularity of having changed very little during its long existence. It can be recognized by its streamlined body covered with large silver scales and its mouth with a prominent lower jaw with many small pointed teeth. These characteristics seem to have inspired the different appellations attributed to it according to its geographical distribution: "Silver King" in America or the "Great Scale" in the West Indies.

The Gag fish belongs to the Serranidae family. The gag fish can reach a maximum total length of 1.45 m and a maximum weight of 36.5 kg. This species has a life span of 16 years. They breed from January to May. They can be fished from June to December. The gag fish is typical of groupers with an elongated oblong body. The head is long while the mouth is large with a protruding lower jaw. The bases of the dorsal and anal fins are covered with thick skin and scales. The caudal fin is wide and has a slightly concave margin. The body color of the gag fish depends on the sex and age of the fish. Juveniles and mature females are pale grey to greyish brown with dark spots and worm-shaped marks giving a marbled appearance. The caudal, anal and pelvic fins have dark blue outer margins. Large mature males are pale to medium grey in color, with barely visible cross-links below the dorsal fin. The ventral surface is dark grey to black. The soft dorsal fin, caudal fin, pectoral and pelvic fins also range from dark grey to black, while the margins of the anal and caudal fins are white.
